If you are working only with audio files, you might want to try Audacity (http://audacity.sourceforge.net/).
It is free, open source and works almost the same across multiple platforms. It's been over 3 years since
I used it.

Personally, I use Camtasia for Mac (for video podcasts) and GarageBand (for audio only podcasts).

Camtasia (http://www.techsmith.com/camtasia.html) is more stable than Adobe Captivate (http://www.adobe.com/products/captivate.html), Echo 360 (http://echo360.com/), and Panopto.(http://www.panopto.com/)

If you are working only with audio files on a Mac OS X device, you'll find that GarageBand is very easy to use
(http://www.youtube.com/watch?v=RimJ6BfQaTE) and produces excellent quality podcasts.

If you are working on a PC only platform, you may like Articulate (http://www.articulate.com/rapid-elearning/).  It has a longer learning curve
but is currently the industry leader in rapid e-learning technology.
