Can't you set the "Grade Posting Policy" to "manual" and not post grades 
so that students don't see their score until you post it?

Automatic posting means that grades show up when students complete the
assignment, while with manual, you select when they're released. For
example, I had manual posting for a recent final and only posted the score
when ready for questions. Students had no idea of their score until I
manually posted their scores.
